Aalo tamatar curry vegetable is a pure traditional vegetable of Rajasthan; mostly served in parties also. This is easy as well as simple vegetable .All the ingredients are available in our kitchen cupboard. From the nutritious point of view this is a perfect vegetable as Potatoes provide us starch , minerals , vitamin C and B1. On the other hand tomatoes contains iron , vitamin A and C. Aalo tamatar curry vegetable
For 5-6 persons
Aalo (potato)- 11-12 means 1 kg , boiled and peeled
Tomato (tamatar ) – 6 chopped
Green chillie – 2 chopped
Bay leaf- 1
Heeng ( asafetida )- ¼ tsp
Jeera (cumin seeds ) – ½ tsp
Oil – 4-5 tbsp
Turmeric powder- ½ tsp
Red chilli powder- 1 tsp
Salt – 1 ½ tsp or according to taste
Water – 2 ½ glasses
Chana masala – 2 tsp
Garam masala – ¼ tsp
Coriander leaves for garnishing
Heat oil in a kadahi , put condiments , haldi and chopped tomato and green chillies.add chilli powder and salt. cook till tomato tenders . mash boiled potatoes in water ( you can cut also ) and put in kadahi, cook till boil. Now add chana masala and garam masala , mix cook for little and garnish. Aalo tamatar curry vegetable is ready.
1.Consistency of vegetable is on your choice.
2.For variation you can add garlic to it.
3.Best with poories or parathas.
