Carrot Chillie ( Gajar Mirch ka Aachar ) Pickle
Carrot – 2 kg.
Green chillie – ½ kg.
Oil for seasoning – 8-10 tbsp
Heeng – ¼ tsp
Saunf – 3-4 tsp
Turmeric powder – 2 – 3 tsp
Red chillie powder – 2 tsp
Salt – 5 tsp
Aamchur ( raw mango powder ) – 3 tsp
Wash and dry the vegetables. Remove the seeds of chillies and cut both of the vegetables into thick shreads. Heat oil in a kadahi. Put heeng, saunf than turmeric powder . immediately add carrots , chillies and remained spices. Mix all . off the gas. ( just sauté for 1-2 min.) pickle is ready. Cool it and fill in a glass bottle. Pour 1 kg. oil over it to keep it safe for a long time.
1.Mustard oil is best for pickle.
2.Before adding oil , Heat oil till smoke, than cool .
