Boiled Potato (medium size)- 7-8

Green chilli- 1 chopped

Turmeric powder- ½ tsp

Red chilli powder- ½ – ¾ tsp

Coriander powder- 1 ½ tsp

Salt- 1 tsp

Aamchur( raw mango powder)- ½ tsp

Garam masala- a pinch of

Oil-3-4 tbsp

Seasoning contents:

Bay leaf- 1

Heeng(asafotida)- a pinch of

Jeera(cumin seeds)- ½ tsp

Rai(mustard seeds)- ¼ tsp


Peel the potatoes and cut in to small pieces. In a bowl take green chilli, turmeric powder, red chilli powder, coriander powder and little water to make a masala paste.Heat oil in a kadahi. Put seasoning contents, low the flame and add above masala paste. Cook for 1-2 minutes. Add salt, potatoes, aamchur and garam masala. Mix well. Off the gas after 2-3 minutes. Dry Aalo Bhaji is ready. Serve it with puris, parathas,chapattis. Can be serve with Dal Bati as side vegetable.
