Mirch ka pakoda ( The most famous Rajasthani Pakoda)
Take ½ kg. green chillies
Split and remove seeds. boil chillies for few minutes in water with some salt to reduce its spiciness.
Ingredients for batter;
Besan ( gram flour ) – 1 bowl
Salt – ½ tsp according to taste
Red chillie powder – ¼ tsp according to taste
Saunf ( aniseeds) – ¼ tsp
Heeng ( asafotida ) – a pinch of
Sweet soda _ a pinch of
Oil – ½ – 1 kg to fry bhujias
Mix all the ingredients in a bowl.
The batter should be of thin consistency Make the batter with water , by continuously stirring in clockwise direction to avoid lumps. Beat it finely. Keep it for 10 – 15 min.
Ingredients for filling;
Potatoes – 1 kg. , boiled and peeled
Salt – 1 ½ tsp. according to taste
Red chillie powder – 1 tsp. according to taste
Aamchur ( raw mango powder ) – 1 tsp
Garam masala – ¼ tsp
Mash potatoes , Mix all the filling ingredients in a bowl. Our raw masala is ready for use.
We can saute it. Put little oil in a kadahi , season with 1 tsp. saunf ( aniseed ) , ¼ tsp turmeric powder . add above masala, off the gas. Put coriander leaves, mix all well.
Heat oil in a kadahi. Take chillies and fill masala into them one by one. dip in batter of besan, and immediately put in hot oil.bake from both sides . take out and serve hot with imli , dhania chatni , or tomato sauce or with hot ginger tea.
